Can a employer dock your final paycheck for missed days if you are salaried paid? The owner said that the missed days were ok and I did not need to make them up, but now that I left the company he said that he is going to dock my final paycheck for those missed days/

This is determined by state pay laws, which vary quite a bit. When you were hired you may also have signed an authorization that permits deductions such as this. That may or may not be valid, again depending on the state. Please let us know where you're from.

I am from Colorado. It is a privately owned business and my offer letter with my salary was typed up on a word doc the day I accepted the position.

Colorado law deals with paycheck deductions in section 8-4-105 of its Wage Act, available here. As you can see, your situation does not seem to fit any of the categories of allowed deductions, since it does not sound like there was a written agreement or any other authorization by you of the deduction.
